This simple weeknight Mexican casserole that comes together in a snap is full of quinoa, ground turkey, black beans, and veggies

1 lb lean ground turkey
2 tbsp taco seasoning
½ cup onion, chopped
1 green pepper, chopped
1 cup cooked quinoa
1 can black beans, drained
1 cup corn
2 cups shredded monterey jack cheese
