Herby Tabbouleh Risotto With Roast Tomatoes

The classic flavours of Tabbouleh flavour this simple Risotto recipe. Full of mint, parsley and lemon and then topped with roast cherry tomatoes for an incredible sweetness!

For the Risotto:
2 tbsp olive oil
1 onion ( finely diced )
2 celery stalks ( finely diced )
400 g arborio rice
300 ml white wine
1.6 l vegetable stock
40 g parmesan cheese ( grated )
2 lemons ( juiced )
30 g mint ( finely chopped )
30 g parsley ( finely chopped )
salt and pepper
For the Tomatoes:
600 g baby plum tomatoes
1 tbsp olive oil
salt and pepper
