Homemade English Muffin Bread

A simple to make bread that is hearty and chewy. It is especially good toasted. English Muffin Bread is wonderful with soups and main dish entrees as well as breakfast.

1 loaf
5-1/2 c. warm water
3 pkgs Rapid Rise yeast ( 7 tsp )
11 c. all-purpose flour
1 1/2 tbsp salt
3 tbsp sugar

2 large eggs ( room temperature )
1/3 c butter ( melted )
4 1/2 c bread flour

1/2 c white sugar

chopped nuts ( walnuts or pecans optional )
raisins or diced apples ( optional )
FROSTING
1 ( 3-ounce package cream cheese, softened )
1/4 c butter ( softened )
