Homemade Homestyle Chicken Noodle Soup

A basic recipe for chicken noodle soup, that is much better than any canned variety.

2 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
2 medium carrots, peeled and cut diagonally into 1/2 inch thick slices
2 celery ribs, halved lengthwise and cut into 1/2 inch thick slices
2 teaspoons dried thyme
1 bay leaf
8 cups low sodium chicken stock
8 ounces wide egg noodles, uncooked
1 1/2 cups shredded cooked chicken
black pepper to taste
the juice of 1/2 a lemon
