HOMEMADE ICE CREAM CAKE WITH A CHOCOLATE COOKIE CRUST

::cookie crust:: {if your allergies aren’t an issue you can certainly skip this step and make do with store bought chocolate cookies, I would buy 2 packages}
1 tablespoon ground flax mixed with 3 tablespoons water; mix and set aside
1 1/4 cups flour
1/2 cup cocoa
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups sugar
1/2 cup plus 2 tablespoons cold butter cut into pieces

3/4 cup brown sugar
3/4 cup granulated sugar
1 cup cocoa powder
1 cup cold water
dash of salt
1 teaspoon vanilla
