Homemade Lasagna Soup

This soup is seriously yummy! It tastes just like lasagna, but in soup form, so how could it not be amazing?!

1/2 lb lean ground beef
1/2 lb Italian sausage
salt and pepper, to taste
1 Tbsp olive oil
1 yellow onion, diced
3 large garlic cloves, minced
4 cups low-sodium chicken broth
2 (14.5 oz) cans diced tomatoes
2 1/2 Tbsp tomato paste
1 1/2 tsp dried basil
3/4 tsp dried oregano
1/2 tsp dried rosemary, crushed
1/2 tsp fennel seeds, crushed
1/2 tsp dried thyme
1 tsp granulated sugar
1 1/2 Tbsp chopped fresh parsley
8 lasagna noodles, broken into bite size pieces
2 heaping cups of Spinach (optional)
1 heaping cup shredded mozzarella cheese
1/2 cup shredded Parmesan cheese
8 oz ricotta cheese (or cottage cheese)
