A homemade enchilada sauce that is not only delicious, but easy to make.

2 tablespoons canola oil
2 tablespoons all purpose flour
4 tablespoons chili powder
1/2 teaspoon garlic powder
1/4 teaspoon cumin
1/4 teaspoon oregano
2 cups low sodium vegetable stock
