Homemade Strawberry Ice Cream Topping

An easy and delicious homemade strawberry ice cream topping.
1 pint fresh strawberries, roughly chopped
1/3 cup granulated sugar
1 teaspoon vanilla extract
1/3 cup granulated sugar
1 teaspoon vanilla extract
Set aside about 1/3 of the chopped strawberries.
In a medium saucepan combine the the remaining strawberries and sugar. Bring the mixture to a boil over medium high heat, stirring occasionally. Boil and cook for 5-10 minutes, or until sauce thickens to you liking. Remove from the heat and stir in the reserved strawberries and vanilla extract. Let the sauce cool to room temperature before using or storing. Leftovers will keep in an airtight container in the refrigerator for 2-3 weeks.
