Honey and Buttermilk Gluten Free Cornbread

1 cup Gluten-Free Bisquick
1 cup yellow cornmeal
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 egg, room temperature
1/4 cup honey
1/4 cup applesauce
3 tbsp unsalted butter, melted and cooled
1 1/2 cups buttermilk
1 cup yellow corn kernels (fresh, or thawed and drained if from frozen)
1 tbsp cold butter (for the top of the cornbread before it cooks)
