Honey, Date & Quinoa Salad

25 g dates
40 g cucumber
30 g red onion
50 g yellow cherry tomatoes
50 g quinoa
3 g ginger paste
1/2 tsp dijon mustard
1 tsp honey
1 tsp apple cider vinegar
1/4 lemon, juice
  • First cook the quinoa. Soak the quinoa in a small bowl of water for a couple of minutes. Drain and refill the water a couple of times to remove the coating which can make it bitter.
