Honey Lime Chicken Enchiladas

You can make 2 types of enchiladas, 1 red sauce and 1 salsa verde with this recipe. They are both delicious! Or you can use your favourite enchilada sauce. By using a preroasted chicken and buying bottled sauces, it was crazy easy to make and they tasted so good... even the next day!

8 (2 each)
1 roasted chicken ( all meat taken off bones )
1 container salsa verde
1 container red enchilada sauce
16 tortillas
4 cups Mexican cheese ( shredded )
1/2 cup honey
1/2 cup lime juice
1 tablespoon chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper

Preheat oven to 350.

In a large bowl, whisk together the honey, lime juice, all the spices, salt and pepper.

Add the shredded chicken. Let marinate 10 minutes.
