Hot Chicken Salad Casserole Recipe

My kids are really liking casseroles right now, so I found one that is a little healthier. This Chicken Salad Casserole has chicken, veggies, and almonds. It was a hit for everyone in my family! (Even my picky 3 year old ate it)

3 cups cooked chicken breast, cubed

2 stalks celery, sliced

1 red sweet pepper, chopped

1 cup of cheddar or mozzarella cheese, grated or shredded

1 (10 3/4 ounce) can reduced-fat and reduced-sodium condensed cream of chicken soup

1 (6 ounce) container of plain low-fat yogurt

1/2 of a yellow onion, chopped

1 tablespoon lemon juice

1/4 teaspoon black pepper

1/2 cup crushed cornflakes

1/4 cup sliced almonds
