Sofrito is an aromatic mix of herbs and spices, used as a base flavoring and seasoning in cooking all throughout the Caribbean, especially in Puerto Rico and the Dominican Republic. This fragrant mixture is used to season countless dishes such a stews, beans, rice, and occasionally meats.

4 yellow onions - peeled and quartered
4 red bell peppers - stems and seeds removed
