This amazing Instant Pot Chili recipe is guaranteed to satisfy any comfort food cravings! The optional twist for Southwest Chili includes sweet potatoes and corn for a delicious sweet & spicy flavor kick.

1-1/2 cups dry pinto, black, or kidney beans ( soaked overnight )
1 tablespoon oil
1 pound extra lean ground beef
2 tablespoons chili seasoning
½ tablespoon ground cumin
1 teaspoon paprika powder
1 medium onion
1 red bell pepper
3 garlic cloves
28 ounces canned diced tomatoes
14.5 ounces canned crushed tomatoes
  1. Pick over and rinse the beans. Add to a bowl and cover with plenty of water. Let soak overnight or at least 12 hours. When ready to cook, drain the water and rinse the beans again.
