2 tsp olive oil
2 lbs ground beef ( I use 90% lean )
1 onion ( finely diced )
1 1/2 tsp minced garlic
28 ounce can diced tomatoes ( do not drain )
3 8 ounce cans of tomato sauce
3/4 cup beef broth
2 tbsp chili powder
2 tsp ground cumin
2 tsp smoked paprika
2 tsp cocoa powder
1 tsp granulated sugar
1 1/2 tsp kosher salt
3/4 tsp ground pepper
15 ounce can kidney beans ( drained and rinsed )
15 ounce can pinto beans ( drained and rinsed )
Assorted toppings ( such as shredded cheese, tomatoes, green onions and sour cream )
  • Turn your Instant Pot to Saute, then select More. Add the olive oil to the pot. Add the meat and cook until browned, breaking up the beef with a spatula as you stir.

Ridiculously easy and quick vegan spinach soup. 5-ingredients, but nothing fancy or hard to get. Creamy, healthy, not to mention kid-friendly.

1 tbsp Olive oil
1 Onion
2 cloves Garlic
300 grams Fresh Spinach Leaves ( approx. 10 oz )
600 ml Vegetable broth ( approx. 2.5 cup )
2 Potatoes
Salt
Pepper

Wash the fresh spinach leaves. Peel and finely chop onion and garlic. Peel and dice potatoes. The smaller you dice them, the shorter will be your cooking time.
