Irish Coddle

This is a bowl full of absolute Yummy-Ness! I don't know if it's a soup or stew but if it was a soup it is a delicious soup! If it was a stew it was the best darn stew I've ever had! It is potatoes, sausages, peppers, bacon and broth.

3 cups beef broth
1 pound smoked sausages, cut into thin rounds
1/2 package bacon, chopped
6 potatoes, peeled and sliced into 1/2-inch thick rounds
2 yellow onions, sliced into thin rounds
3 large carrots, sliced into thin rounds
1 1/2 teaspoons thyme
2 tablespoons parsley, chopped
