This is a perfect potato dish when you are looking for something different. This would go perfect with a roasted chicken or a roast beef. Drizzle gravy on top and you have something pretty special :)

2 lbs potatoes, peeled and cut into cubes
1 garlic clove, pressed
2 tablespoons of chives, finely sliced
½ cup sour cream
1 teaspoon of mustard
