2 lbs assorted sausage links in casings
1 1/4 cup Guinness stout beer, divided
1/2 cup water
1/3 cup heavy cream
2 tablespoons Dijon mustard
1 tablespoon horseradish
salt and pepper
3 tablespoons chives, chopped
