Italian Chicken and Rice Recipe in One Pot

This is another one of those easy one-pot meals that pack a lot of flavor and nutrition. It's all cooked in one pot for a great infusion of flavors. Don't you just love it when you can prepare something so tasty and delicious and yet so quick!

1 tablespoon olive oil
4 fresh chicken thighs
4 fresh drumsticks
1 red onion, cut into wedges
1 red capsicum/bell pepper, chopped
4 garlic cloves, crushed
1/2 cup pitted olives
1/2 cup Sundried tomato strips in oil
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 cup fresh parsley, chopped
1 cup long grain rice
400 grams can chopped tomatoes
1 1/2 cup chicken stock
freshly grated parmesan cheese
chopped parsley

1. Heat oven to 200c | 400F.

2. Heat the oil in a large, shallow ovenproof cast iron skillet/or pan.

3. Add the chicken and fry for 3-4 mins on medium-high heat.
