Like an Italian version of Chicken Cordon Bleu, these Italian Chicken Roll-Ups are a true crowd pleaser! Thinly sliced chicken breasts are stuffed with ham and provolone cheese and rolled in seasoned breadcrumbs and Parmesan cheese for an easy, make-ahead weeknight dinner.

2 lbs. thinly sliced chicken breasts (or regular chicken breasts that have been pounded to ¼-inch thickness)
6 thin slices deli ham or prosciutto
6 slices provolone cheese
2/3 cup Italian seasoned breadcrumbs
½ cup grated Parmesan cheese
¼ cup minced fresh parsley (or 1-2 tablespoons of dried parsley flakes)
