Italian Chicken Salad

This Italian Chicken Salad is perfect for an easy lunch or dinner and makes delicious sandwiches, too!

4 cups shredded rotisserie chicken (I use the store-bought already shredded kind)
1/2 cup halved, fresh mozzarella pearls
1 (2.25 ounce) can sliced black olives, drained
1/2 cup halved cherry tomatoes
1/4 cup plus 2 tablespoons mayonnaise
1/4 cup prepared pesto sauce
Dash of salt
Sub rolls for serving, if desired

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
