Why settle for bologna when you can have mortadella??? Easy to make and extra delicious!
1/2 pound pork back fat
1/3 cup powdered nonfat dry milk solids
1/2 cup ice water
1.5 tablespoon salt
1 teaspoon ground white pepper
1 teaspoon ground mace
1 teaspoon ground nutmeg
1 teaspoon ground mustard
1/4 teaspoon pink curing salt
Cut the pork back fat into a quarter inch dice.
Place the diced pork fat into the freezer and allow to chill for at least 30 minutes.
Combine all ingredients EXCEPT the diced pork back fat...
