This Italian Pesto Zoodle Salad makes a perfect cooling summer meal. Topped with a 3 ingredient pesto vinaigrette, this salad comes together in 10 minutes. This recipe can easily be adapted to make warm pesto zoodles.

Salad:
2 zucchinis
1 carrot
1 cup purple cabbage ( shredded )
2 bell peppers ( sliced thinly )
olive oil ( to taste )
1 cup marinated artichoke hearts
1 cup black olives
1/4 cup pesto
1/4 cup lemon juice
1/4 cup white wine vinegar
  1. Prepare pesto vinaigrette by adding the ingredients to a jar and shaking, then set aside.
