These traditional Italian Ricotta Cookies are soft, moist and coated with a thick frosting! For the Cookies:
1 c salted butter
1 c ricotta cheese
2 t vanilla extract
2 c sugar
2 eggs
4 c all purpose flour
2.5 t baking powder
1 t salt
For the Frosting:
1 T salted butter
3.75 c confectioners sugar
1/2 t almond extract
1 t vanilla extract
4-6 T milk
