1 whole chicken ( Skin on, cut in half, lengthwise )
1/2 cup Lime juice ( Freshly squeezed )
Salt and pepper
Jerk Chicken Marinade:
1/4 cup Red wine vinegar
1/4 cup White wine vinegar
2 tablespoons anejo rum
2 Scotch bonnet peppers ( With seeds, chopped )
1/2 red onion ( chopped )
4 green onion tops ( chopped )
2 tablespoons Thyme leaves Fresh ( chopped )
2 tablespoons extra virgin olive oil
2 teaspoons salt
2 teaspoons freshly ground black pepper
4 teaspoons ground allspice
4 teaspoons ground cinnamon
4 teaspoons ground nutmeg
4 teaspoons ground ginger
2 teaspoons molasses
