John's Ham Fried Rice

Lot of kids these days are not big fans of vegetables my are no different. When I have served cooked broccoli and raw carrots for weeks I through in a wild card that I know they like and will eat a lot of. I make "John's Ham Fried Rice".
3 Tbsp. olive oil
1 cup carrots
2 cups diced onions
1 1/2 cup diced celery
1/2 cup each, diced red and green pepper
1-2 cups diced ham, pork, chicken or shrimp
1/2 -3/4 cup soy sauce
6 cups cold cooked brown rice
1egg, well beaten

In medium hot non-stick frying pan, add 1 tsp. oil and beaten egg. Make a thin egg crepe by rotating pan and turning the egg only once. Remove from pan and set aside. Add remaining oil to hot frying pan....
