This is the first Chopped I made. I just revisited it and added nutritional options for all eating programs

Bowl Ingredients:
4 cups Arugula, Spinach or Hearts of Romaine, Chopped
1 cup Roasted Green Beans , Chopped Broccoli is a good sub. You can easily
Microwave Steam either as an option
10 oz. cooked Chicken Chopped. Stay vegetarian and use 1 cup white beans. If canned, drained and rinsed
4 Queen Sized Green Olives, finely Chopped
16 Grape Tomatoes, Quartered
3 Green Onions, Chopped
1 cup cooked Brown Rice, Quinoa or Barley
1/2 oz. finely Grated Parmesan Cheese. Or stay Dairy Free and use 1/2 Avocado, Chopped

Zing Factor:
5 leave of Fresh Basil, finely Chopped

)Chopped Style Dressing Ingredients:
1 Tablespoon Olive Oil
2 Garlic Cloves, finely Chopped
2 Tablespoons Balsamic Vinegar
1/2 teaspoon Dried Oregano
Juice of 1/2 Lemon
Kosher or Sea Salt to taste
Freshly Ground Black Pepper to taste
