These lemon bars taste just like the real thing, if not better. They're also pretty easy to make, even though you'll go through several steps in the baking process. And at only 1g net carbs per serving, who could resist these yummy, lemony desserts?

Crust:
4 tbsp butter
1 (¼ cups) almond flour
2 tsp finely grated lemon zest
3 tbsp erythritol
Filling:
1/3 cup butter
1/3 cup desired sweetener ( like erythritol )
4 egg yolks
¼ cup fresh lemon juice
2 tbsp finely grated lemon zest
¼ tsp xanthan gum
1 (½ tbsp) powdered gelatin
