Keto Shiitake Soup of the Sea

This soup is keto friendly and full of fiber. I love the flavors of the sea and the deep flavor of re-constituted, dried shiitake mushrooms. It adds a depth of flavor to this Asian sour and salty broth. I use anchovies as an alternative to the fish sauce in my Asian-inspired recipes because the fish sauce has just too much of an unknown list of ingredients for my liking.

FOR THE CALAMARI RINGS:
3 pieces Squid tubes sliced into rings
1 cup Almond meal
FOR THE BROTH:
3 pints Vegetable stock
1.5 ounces Anchovies
4 Spring onions
3 Carrots cut into matchsticks
1 bunch Bok choy chopped
10 Dried shiitake mushrooms

If you are planning this soup ahead of time cover the shiitake mushrooms with water and soak 8 hours or overnight. Otherwise, use boiling water, put a lid on and leave to soak for 20 minutes. After soaking ...
