1 cup Finely shredded Lettuce
1 cup Bamboo shoots
1 cup Finely shredded Red cabbage
1/2 cup Finely chopped Coriander
1/2 cup Finely chopped Mint
1 cup Sliced into matchsticks Cucumber
1 cup Sliced into matchsticks Carrot
20 Sliced into matchsticks Large prawns
1/4 cup Finely chopped Spring onion
(1 cup) Crushed peanuts or macadamias
1 cup Bamboo shoots
1 cup Finely shredded Red cabbage
1/2 cup Finely chopped Coriander
1/2 cup Finely chopped Mint
1 cup Sliced into matchsticks Cucumber
1 cup Sliced into matchsticks Carrot
20 Sliced into matchsticks Large prawns
1/4 cup Finely chopped Spring onion
(1 cup) Crushed peanuts or macadamias
Throw all the veg ingredients, prawns and peanuts or other nuts into a large bowl. Add the dressing immediately before serving and toss through gently to coat ingredients.
