Keto Vietnamese Prawn Salad
Keto Vietnamese Prawn Salad takes salads on the next level. It gives you so much protein and fiber, you may not need a main dish!
2 cups chopped baby tomatoes
2 cups sliced cucumbers
1.5 cups avocado slices
handful chopped coriander
handful chopped mint
3 cups cooked and peeled prawns
1/2 cup cold pressed macadamia oil
1/4 cup anchovies
2 tablespoons apple cider vinegar
Grab a large bowl and fill it with the green salad leaves, baby tomatoes, cucumbers, and avocado slices. Throw in the chopped coriander and mint.
