This is the kind of dinner that’s so easy to put together that it almost seems wrong to call this a recipe. I make this one every time the bell peppers are on sale here. It’s a great dinner for a busy night or a night when you just don’t feel like doing much cooking. You can add sliced onion in with the bell peppers if you want; it’s good either way.

1 T. olive oil
1 red bell pepper, seeded and cut into thin strips
1 yellow bell pepper, seeded and cut into thin strips
1 orange bell pepper, seeded and cut into thin strips
2-3 cloves garlic, minced
1 package smoked kielbasa, cut into ½-inch pieces
1/4 c. shredded parmesan
1 package linguine, spaghetti, or angel hair pasta
1 red bell pepper, seeded and cut into thin strips
1 yellow bell pepper, seeded and cut into thin strips
1 orange bell pepper, seeded and cut into thin strips

In a large skillet, heat olive oil over medium low heat.
Add bell peppers and garlic. Sauté for about 5 minutes.
Add kielbasa. Stir and cook until kielbasa is cooked through.
