Caramel corn is one of my favorite snacks. This homemade version is sure to knock your socks off.

1 cup unpopped popcorn kernels
2 sticks unsalted butter,
1/2 cup light corn syrup
2 cups packed light brown sugar
1 tsp salt
1/2 tsp baking soda
1 tsp vanilla extract

Preaht the oven to 250 degrees and line 2 large cookie sheets with parchment paper.
