Here's the perfect sick-day meal, chock full of ingredients that will help boost the immune system and soothe a sore throat. We've purposefully kept this recipe light and easy to digest—and easy to prepare just in case you have to cook for yourself when you're under the weather.

4 tablespoons Organic Extra Virgin Coconut Oil ( unrefined )
6 leeks ( medium, washed and chopped into ¾-inch rounds )
3 carrots ( medium, peeled and chopped coarsely )
2 Yukon gold potatoes ( medium, peeled and chopped into approximately one-inch cubes )
3 stalks celery ( chopped coarsely )
3 cloves garlic ( large and crushed )
1 bay leaf
1 teaspoon salt
½ teaspoon cracked black pepper
1 pinch red pepper flake ( more or less to taste )
2 tablespoons fresh parsley ( chopped )
6-8 cups water
