Crisp, refreshing Lemon Cheesecake…It's absolutely delicious with it's perfectly sweetened graham cracker crust and homemade lemon curd topping!

Crust:
1 1/2 c. crushed graham crackers
1/4 cups light brown sugar
stick unsalted butter
teaspoon vanilla extract
Lemon Cheesecake Filling:
32 oz. cream cheese ( full fat, room temperature )
4 tablespoons unsalted butter ( room temperature )
1 cup granulated sugar
1 teaspoon vanilla extract
6 tablespoons fresh lemon juice
3 eggs, whole ( room temperature )
1 cup sour cream ( room temperature )
1/4 cup flour or corn starch
Lemon Curd:
3 eggs, whole
3 egg yolks
2/3 cup granulated sugar
6 tablespoons fresh lemon juice
1 stick unsalted butter
1 1/2 c. crushed graham crackers
1/4 cups light brown sugar
