This Lemon Coconut Cake is heaven! I am a huge fan of coconut and adding lemon to the mix was such a delicious twist! This cake is moist, sweet, tangy and irresistibly good! The cream cheese frosting is the perfect icing on top! This cake is a must try and perfect for Spring!

1 1/2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup shredded coconut
1 cup coconut yogurt
3/4 cup sugar
3 eggs
1 tbsp lemon zest
2 tbsp lemon juice
1/3 cup coconut oil ( melted )
1/2 tsp almond extract
Cream Cheese Frosting:
2 ounces cream cheese ( softened )
4 tbsp unsalted butter ( softened )
1 1/2 cups powdered sugar
1/8 tsp almond extract
2 tbsp milk
  1. Preheat oven to 350°F.
  2. Grease a 9x5 loaf pan and set aside.
