A tender Lemon & Coconut Loaf, with hot lemon syrup poured over it as soon as it comes out of the oven, giving it a perfect balance of sweetness & tartness.

3/4 cup milk
1/2 cup dessicated coconut
125 grams butter (room temperature)
1/2 cup castor sugar
2 teaspoons lemon rind (from one medium sized lemon)
2 eggs
1 1/2 cups standard flour
2 level teaspoons of baking powder
a pinch of salt

LEMON SYRUP
1/2 cup castor sugar
1/2 cup lemon juice (you will need about 5 medium-sized lemons for this)
