Lemon Cupcakes with Raspberry Frosting by Amber

With Spring officially beginning next week, I can’t help but to be focused on foods that remind me of warmer weather and these lemon cupcakes with raspberry frosting do just that. You get that nice sour lemon flavor when you bite in that pairs so nicely with the fresh and sweet raspberry frosting.

Lemon Cupcakes
2 cups all purpose flour
1.5 teaspoon salt
1.5 cups granulated sugar
.5 cup half and half
1 teaspoon vanilla extract
3/4 cup unsalted butter, room temperature
3 eggs
1 lemon juiced
.5 lemon zest
10 drops yellow food coloring
Raspberry Frosting
1 cup raspberries
3/4 cups granulated sugar
1.5 tablespoon lemon juice
4 cups powdered sugar
1 cup unsalted butter, room temperature
5 drops red food coloring
