Lemon Pie Pops
Remember looking forward to a cold popsicle from the freezer on a hot day as kid? There was nothing better. Now we\\\'re all grown up, and there\\\'s still nothing better than a cool pop on hot day. But we\\\'ve moved on to the much more grown up LEMON PIE POPS. They’re made from a Greek yogurt base, so they’re relatively healthy, AND a yummy way to cool off., perfect for an after dinner treat or a satisfying snack

2 cups nonfat vanilla Greek yogurt (regular yogurt may be substituted)
3 tbsp lemon juice
1/2 cup granulated sugar
1/4 tsp pure lemon extract
2-3 drops yellow food coloring
2-3 shortbread cookies, Nilla wafers, or golden Oreos, crushed

Stir together the yogurt, lemon juice, sugar, extract, and food coloring until evenly combined .
