Lemon Poppy Seed Vegan Pancakes

We were craving for some refreshing, super delicious, and fluffy American pancakes but at the same time we wanted to make something new. Then we came to the idea to make Lemon Poppy Seed Vegan Pancakes.

Pancakes:
1 1/2 cup quinoa flour
2 tablespoons ground flaxseeds
6 tablespoons water
1/2 teaspoon baking soda
3 tablespoons maple syrup
2 tablespoons poppy seeds
3 tablespoons lemon juice
1 tablespoon coconut oil (melted)
300 ml non-dairy milk
1 teaspoon baking powder
1 tablespoon apple sauce
Topping:
5 g lemon zest
2 tablespoons maple syrup
  • How to make a flax egg: Combine 2 tablespoons of ground flaxseeds (flaxseed meal) and 6 tablespoons of water. Stir well. Let it sit for about 5 minutes.
