Quinoa & Carrot side dish full of flavor and texture and a hint of lemongrass.

3 tablespoons coconut oil
3 Medium carrots (grated)
2 Large cloves garlic (crushed)
1 Large shallot (finely chopped)
1 - 2 tablespoon lemongrass paste
1 1/2 cup cooked quinoa
1/4 teaspoon cumin
1/2 cup fresh spinach (chopped)
salt and pepper to taste
