2 tsp olive oil
1/2 red onion
1 tsp cumin seeds
3 garlic cloves
1 jalapeno
1 inch ginger
4 tsp garam masala
1/2 tsp salt
1/2 lime juiced
1 cup diced tomatoes
1 1/2 tbsp coconut sugar
8 oz spinach
