Leslie's chocolate cake

My ex SIL used to make these into cupcakes and then fill them with Fluffy Baker's Icing.

3 cups flour
3/4 cups oil
3 Tablespoons vinegar
2 cups water
2 cups sugar
2 Tablespoons baking soda
3/4 cup cocoa
2 teaspoons vanilla
1 teaspoon red food coloring
Fluffy Baker's icing ingredients:

1 1/2 cups milk
2 Tablespoons cornstarch
1/2 cup shortening
1 cup sugar
1/2 cup butter
dash salt
1 teaspoon vanilla
Mix above ingredients well. Portion into cupcakes. Bake at 350 degrees for 20 minutes. For icing: Cook milk and cornstarch until thickened. Then cool to lukewarm. Whip shortening, sugar and butter for 10 minutes. Add salt and vanilla. Add the milk cornstarch mixture and whip until fluffy.
