2 1/2 cups diced sweet potatoes ( about 2 small potatoes )
1 zucchini ( sliced into medallions )
6 large egg whites
6 large eggs
2 tbsp sun dried tomatoes
2 tbsp greek yogurt
2 tbsp unsweetened almond milk
1/4 cup extra virgin olive oil
1 tsp garlic powder
salt and pepper to taste
