Lighter Victoria Sponge Cake

This lighter version of a British classic has reduced sugar and fat but tastes amazing!

20g butter (melted and slightly cooled)
100g plain (all-purpose flour)
2.5 teaspoons baking powder
1/4 teaspoon bicarbonate (baking) soda
70g sugar
1 teaspoon vanilla sugar
1 large egg
90ml sour cream or yoghurt (mine was 12% fat)
1 tablespoon vegetable oil
2 tablespoons jam/jelly (I used strawberry)
Icing sugar for sprinkling (optional)
