A slightly sweet, but tart muffin. Using Greek yogurt and olive oil to make them moist, and chia seeds to add a poppy seed like crunch (with an added nutrient bonus).

1 ¾ cups flour
2/3 cup sugar
2 teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon salt
¾ cup Greek Yogurt
3 Tablespoons limequat juice (or substitute lemon juice)
1 Egg
1 teaspoon Vanilla
¼ cup + 2 tablespoons Olive Oil
2 tablespoons Chia Seeds
2/3 cup sugar
2 teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon salt
¾ cup Greek Yogurt
3 Tablespoons limequat juice (or substitute lemon juice)
