Loaded Mashed Potato Casserole

For a favorite side dish that can be made ahead, this mashed potato casserole is sure to be a hit! Loaded with cheese and bacon, this flavorful dish is one of those that you just cannot stop eating. So make sure there will be plenty for everyone!

5 lb potatoes
1 cup sour cream
1/2 cup milk ( or heavy cream )
6 tbsp butter
3 cups shredded cheddar cheese ( divided )
1/2 pound bacon ( cooked and diced )
1 1/2 tsp salt ( to taste )
1 tsp pepper ( to taste )
green onions ( optional )
  1. Peel potatoes, dice and place in large pot of boiling water. Boil for 20 to 25 minutes, until soft enough to pierce with a fork.
