Bowl Ingredients:
8 oz. Leftover Turkey or Chicken, Chopped. I had turkey from Thanksgiving
4 cups Arugula, Chopped
1 cup cooked Quinoa
1/4 cup leftover Roasted Yam Cubes
1/4 cup leftover Roasted Beet Cubes
1/4 cup Chopped Radish
1/4 cup Chopped Celery
1/4 cup Chopped Yellow or Red Bell Pepper
2 Green Onions, Chopped
1 oz. crumbled Goat Cheese

Chopped Style Dressing Ingredients:
1 Tablespoon Olive Oil
1-2 Garlic Cloves, finely Chopped
1 Tablespoon Balsamic Vinegar
1/ Tablespoon Sherry Wine Vinegar
1/2 teaspoon dried Sage
1/2 teaspoon dried Oregano
Kosher or Sea Salt to taste
Freshly Ground Black Pepper to taste
