Few ingredients are all you need for this fancy-looking dish. It's actually quite simple.

4 sweet cherries
1 tablespoon cooked corn
½ avocado
¼ cup orange juice
Remove the skin and core of avocado. Cut into thin wedges of equal thickness. Cut cherries into flowers by making 5 cuts around the top to open up 6 petals and removing the pits. Prepare 4 small serving plates. On each serving plate, place 5 avocado slices in a circle, then put the cherry in the center. Put some corn inside the cherry as stuffing. Divide the orange juice and pour into each serving plate.

A Spanish omelette is also known as tortilla de patatas in Spain where it is a tapa and it consists of just four ingredients plus seasoning. It is a Spanish classic dish for very good reasons. It is simple to make, it is nutritious and absolutely delicious. Oh, Spanish tapas!! Aren't these simply the best?

3 med potatoes sliced or cubed
2 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper or some chilli flakes/cayenne pepper
