Low Carb Ham and Cheese Casserole

This low carb, ham and cheese casserole is a winner! Organic quinoa noodles and a seasoned crushed crouton topping lower the carb count. Lowfat Greek yogurt, veggies, ham and your favorite cheeses, add tons of filling protein and nutrition. Make your own cheese sauce and enjoy taking control of the flavor, fat content, seasonings and flour type.

3 quarts water in a large pot plus 1 tablespoon coconut oil
4 cups uncooked Quinoa noodles
1 onion, chopped
1 clove garlic, minced
1 Cup chopped, or small veggies as desired, celery, broccoli, peas, corn, spinach, kale? I'm using corn tonight.
1/2 cup Greek yogurt
2 cups diced cooked ham
salt and pepper to taste
1 cup crushed, seasoned croutons
(for the cheese sauce)
4 Tablespoons butter
4 Tablespoons flour
parsley, salt and pepper, and other seasonings you may enjoy, to taste
1 cup milk
1 cup organic chicken broth
2 1/2 cups freshly shredded cheese
